For three days near the end of summer, downtown Pueblo is transformed into a giant outdoor festival soaked in the enchanting aroma of roasting chile. People from all over the world come to our little town to check out cooking competitions, live music, countless vendors, rides, arts and crafts, and, of course, chile and beans. While there is plenty of other fresh local produce, the chile is what gets people motivated to head downtown and get a batch for the changing of the seasons.
